Binyamina Cave 2007

In the heart of the pastoral area is an ancient cave, on the walls of which there are magnificent stories from the history of the Land of Israel. Today this cave serves as a winery. The cave was founded in 2000 by the owners of the winery Binyamin, whose goal, along with a commercial winery, to create a prestigious and high-quality boutique winery. For this, professional winemakers were chosen, and a lot of money was invested in first-class equipment. Wine is a blend of Cabernet Sauvignon, 65% and Merlot, 35% of the 2007 crop. Added 2% Petit Verdot. Source: Cabernet Sauvignon and Merlot are vineyards grown in the Upper Galilee. Vineyards in Galilee grow on basaltic soil, and because of their high age they produce naturally low yields, which do not exceed the level of 700 kg per dunum. All these data: the age of the vines, the area of the crop and the level of the crop allow give the wine multilayered richness and aromatic depth. The smell of blackberries, currants and mint, goes well with baked oak, vanilla and some dark chocolate. The taste of wine is complex, elegant and seductive with a long finish. Long shelf life in a cave environment created a balanced wine with complex bokeh. Great feeling while drinking.
